DO IT FOR YOURSELF!

This morning I had an epiphany.  I have so many people, including myself, that tell me they want so badly to lose weight and be fit.  For the past 10 years I have "wanted" to feel better and look better.  There are lots of things that I "want" but as my mom used to always tell us when we were kids "want in one hand and s#@t in the other and see which hand fills up fastest".

So how do you go from just wanting something to actually getting something?  When it comes to losing weight and being fit their is no magic pill, no magic wand and no magic dust that will just make it happen for you.  The skinny fairy has yet to come sprinkle any skinny dust on my ass.  Achieving any goal requires a commitment and to stick with a commitment you need a WHY.  If you have no reason to do something then you are not going to stick with it and you will never succeed.

As I was getting ready to workout this morning I was thinking about how far I have come and how hard I have worked and how proud I am of myself.  If you know me personally you know that once I get something in my head that I am going to do it come hell or high water and the one thing I have been struggling with is the getting rid of these last pounds that are stalking me.  So I knew it was my nutrition and I have found a "magic formula", if you will, that has been a God send and I am finally dropping pounds again.

The one thing that I cannot control is other people.  Those people who reach out to me for help are just like I used to be and I want so badly to help everyone, including myself, get healthy for good and never look back!  I am struggling with finding a way to make sure that I never go back to being the person I was so this morning I have been digging deep and asking myself why I have been able to get this far and how I am able to keep going and not give up even though my weight is coming off slowly and it seems like I am working so hard.  Like a ton of bricks it dawned on me that I am succeeding for several reasons.  One is that if I have a bad day I just start again the next day and I do not let the bad day define me.  I let the good days define me now instead.  There are so many other reasons (being a coach and being surrounded by other people with the same goals as myself, running challenge groups where I also hold myself accountable etc.) but the number one reason that I am winning this battle this time is because of my WHY.  Every time I have tried in the past and lost a few pounds only to gain it back and bring a few of it's friends home with it is because I am no longer doing it for ANYONE else but Me!

Here are a few reasons I used to have for trying to lose weight and be healthier and more fit:

~  I was trying to impress someone else.

~  I had a special event coming up and I wanted to look good.

~  I wanted to make my son proud and not be embarrassed of me when I would go to his school or his football games.

~  I had to get a new driver's license picture (which is the reason I started this time but is definitely not what has kept me going).

Do you see the common denominator in those reasons?  They are all short term goals or they are about someone else.  That is why I always failed.  The difference in then and now is that now I am doing it for myself.  I am doing it so that I feel good and look good.  My epiphany was this:  Do it for you because YOU ARE WORTH IT!

Fontina, Caramelized Onion and Pancetta Pizza

Ingredients

  • Pizza Dough
  • 1 teaspoon olive oil
  • 1 1/2 ounces pancetta (Italian-style bacon) or Canadian bacon, chopped
  • 8 cups sliced onion (about 3 large)
  • 1 tablespoon chopped fresh thyme
  • 1/2 teaspoon salt

  • Yield:  2- 9 inch pizzas        Serving Size:  2 slices
  • 1/2 teaspoon white pepper
  • 1 tablespoon olive oil, divided
  • 3/4 cup (3 ounces) shredded fontina cheese, divided
  • Thyme sprigs (optional)
  • Cracked black pepper (optional)

Preparation

Prepare the Pizza Dough according to directions.
While dough is rising the second time, heat 1 teaspoon olive oil in a large nonstick skillet over medium-high heat; add pancetta, and sauté for 2 minutes. Add onions, thyme, salt, and white pepper; cook 25 minutes or until onions are browned, stirring frequently.
Preheat oven to 475°.
Brush each prepared pizza crust with 1 1/2 teaspoons oil; top each with half of onion mixture. Sprinkle half of cheese over each pizza. Bake at 475° for 9 minutes or until crusts are crisp. Cut each pizza into 8 wedges. Garnish with thyme sprigs and sprinkle with black pepper, if desired.

Pizza Dough

Ingredients

  • 1 teaspoon sugar
  • 1 teaspoon dry yeast (about 1/2 package)
  • 3/4 cup warm water (105° to 115°)
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons olive oil
  • 1/2 teaspoon salt
  • Cooking spray

Preparation

Dissolve sugar and yeast in 3/4 cup water in a large bowl; let stand 5 minutes. Lightly spoon flour into dry measuring cups, and level with a knife. Stir 2 cups flour, oil, and salt into yeast mixture to form a soft dough. Turn dough out onto a lightly floured surface, and knead until smooth and elastic (about 5 minutes). Add enough of remaining flour, 1 tablespoon at a time, to prevent the dough from sticking. Place dough in large bowl coated with cooking spray, turning dough to coat top. Cover dough, and let rise in a warm place (85°), free from drafts, 40 minutes or until doubled in bulk.
Punch dough down. Cover and let rise 40 minutes or until doubled in bulk. Divide dough into 2 equal portions; roll each portion into a 9-inch circle on a lightly floured surface. Place dough circles on a large baking sheet coated with cooking spray. Top and bake according to directions.

Awesome Chocolate Flourless Brownies

Do you love chocolate and sometimes need a little something to satisfy your sweet tooth but you are trying to be healthy?  Are you looking for a healthy alternative to dessert for your family?  These dark chocolate muffins are easy to make, delicious, surprisingly healthy and a must try!  
Total Time: 22 min.
Prep Time: 20 min.
Cooking Time: 12 min.
Yield:12 servings, 1 cupcake each
Ingredients:
1 (15 oz.) can chickpeas (garbanzo beans), drained, rinsed
3 large eggs
½ cup pure maple syrup
1/3 cup unsweetened cocoa powder
1 tsp. baking soda
3 Tbsp. coconut oil, melted
1 tsp. pure vanilla extract
1/3 cup dark chocolate chips
Preparation:
1. Preheat oven to 350° F.
2. Prepare 12 muffin cups by lining with muffin papers or coating with nonstick cooking spray; set aside.
3. Place chickpeas, eggs, maple syrup, cocoa powder, baking soda, coconut oil, and extract in blender or food processor; cover. Blend until smooth.
4. Divide batter among 12 prepared muffin cups.
5. Top each muffin with about four chocolate chips; push into batter.
6. Bake for 10 to 12 minutes, or until toothpick inserted in center comes out clean.
7. Cool completely and enjoy!

Superwoman I Am Not

Here I go again taking my pain and struggles to my trusted friend, my blog. This is the place that I feel like I can be honest and open and hopefully inspire someone else while I am documenting my journey through life.

If you know me or have followed my blog then you know that I have been struggling with self-esteem and my weight for quite some time if not all of my life (at least for as long as I can remember and I am old so the memory isn't exactly what it used to be). One of the things that I have to work on constantly is to not let what others do to me or say about me define me. But that is very difficult sometimes. For example I saw someone (who I won't name) the other day that I had not seen since the first of May. I complimented them on how nice they looked. The first and only thing the person said to me was a derogatory comment about the color of my hair. I wanted to run away and cry but of course I didn't. I simply held my head up and replied that I love my hair and I moved on but the hurt that statement caused is still with me. There is nothing I would like more than to be able to just let stuff like that go but when it continually happens that is easier said than done.

One thing that I am quite aware of is that because I have made my struggles public that I am opening myself up to ridicule and criticism. I am painfully aware that I am putting a target on my back. Am I perfect? NO!! Have I ever said I was perfect? NO!! I simply like to share my story with others hoping that if anyone else out there is having the same struggles that I am facing they know they are not alone. Because I have had people reach out to me and tell me that I have inspired them or motivated them I will not go quietly into a corner and stay there. I will continue to share my story and I will continue to keep soldiering forward no matter the cost. Believe me when I say that I do not think I am perfect and I do not think that I am Superwoman. I am just me trying to figure me out so I can be happy.

For those of you who like to throw stones at others to beat the happy out of them just to try to make yourself feel better just remember that karma is real and she is a bitch. That is fo sho! So Ima take a little advice from Tay Tay and Shake It Off! Have a great day :)
